Supplies Needed:
1. 1 Dozen Baked Round Sugar Cookies
2. Piping Bags and Round Tips
3. Toothpick
4. Parchment Or Wax Paper
5. Royal Icing:
- 1 Tbsp Corn Syrup, Light
- 1 Red, Orange, Yellow, Blue, and Green Food Coloring
- 2 Tsp Lemon Extract
- 2 Tbsp Meringue, Powder
- 2 Cup Powdered Sugar
- 4 Tbsp Water
Instructions:
1. Place the meringue powder and water in a large mixing bowl, and whip with a whisk attachment in an electric mixer until foamy (about 3 minutes)
2. Add the powdered sugar, and whip on medium speed until very stiff and thick (the icing should hold a stiff peak).
3. Tint as needed with coloring.
4. Thin with additional water, one drop at a time, to get the desired consistency.
Note: Once your royal icing has been piped on, you can set it out to dry. After just 15 to 30 minutes, it will form a thin crust on the surface, but it generally will stay wet underneath for several hours. I usually set my cookies out (in a single, flat layer, on parchment paper or lined baking sheet) overnight to dry. They won’t get stale that quickly, because the royal icing actually serves almost like a barrier from the air.
